Springfield, Missouri is famous for being the Birthplace of Route 66. But it is also the birthplace of Springfield-Style Cashew Chicken, a dish that put this Ozarks city on the American Chinese food map.

The dish was created by David Leong in the 1960s. When he opened Leong’s Tea House in 1963, he found that locals weren’t warming up to traditional Chinese cuisine, so he developed something that would appeal to the local palate. The result was Springfield-Style Cashew Chicken: fried chunks of chicken topped with Chinese oyster sauce, cashews, and chopped green onion, a dish that blended traditional Chinese flavors with Ozarks sensibilities.

Leong’s Tea House closed in 1997, but the dish stuck. Today, you’ll find it on the menu of virtually every Chinese restaurant in Springfield. The city even has its own Cashew Chicken Trail, highlighting spots to try the dish in both its original form and creative fusion variations.

If you’re traveling Route 66, you can try this local staple right on the Mother Road at New House Chinese Food. The menu covers all the takeout classics—Sweet and Sour Chicken, Lemon Chicken, Kung Pao Beef, Shrimp Fried Rice, Vegetable Lo Mein, and Egg Foo Young—but the must-order is the Springfield-Style Cashew Chicken. It’s available as a combo with fried rice, an egg roll, and your choice of two Crab Rangoon or two Wontons. You can dine in to try it right there or get takeout or go through the drive through to take it back to your Springfield Route 66 motel.
